Quinces are deliciously aromatic, reminiscent of guava, vanilla and citrus. Their high levels of tannins make them mouth-puckering when eaten raw, however, when cooked, the flesh softens and turns a rosy pink. The taste becomes irresistibly sweet, delicate, and fragrant when cooked.
Enjoy poached, baked into a pie, simmered in a stew, or cooked into a jam.
